Summer Peach Lemonade Made with Monk Fruit

With all the fresh produce stands and farmers markets, we have an abundance of fresh fruit! With this fruit, we are able to create a refreshing summer drink. This peach lemonade is also made fresh squeezed lime juice and fresh mint. To combat the tartness of the lemons and limes, we added a quarter cup of Crave Sweetness Monk Fruit and Erythritol. This delicious recipe can be easily swapped out for any fruit that you might have sitting in your fridge. Berries would be a delicious addition.

What you will need:

3 lemons

3 limes

2 peaches (any variant will do, we used donut peaches)

8-10 mint leaves

1/4 cup of Crave Sweetness Monk Fruit & Erythritol 

Water to taste

Directions:

1. Juice the lemons and limes and put to the side in a cup

2. Slice of the peaches and discarding the pit. Add these to the food processor, along with the mint leaves and monk fruit and erythritol granules. Blend these together, adding about a table spoon of water to help mix the Crave Sweetness Monk Fruit and Erythritol granules throughly. 

3. Use a strainer to separate the juice and the pulp of the peach mixture. (Tip: Save the pulp and pop it into an ice cube tray to throw into a smoothie). Once the juice is separated add it to a pitcher with the lime juice and mix. 

4. Top off the concentrate with more water. We used about two cups of water but you can add more or less depending on how tart you like your juice. You could even sub out the water with soda water to have a spritz, but this won't keep long without getting flat. 

5. Chill the juice in the fridge or add ice cubes and enjoy!

Not the biggest fan of monk fruit and erythritol? No problem. Powdered stevia in various formats that can be substituted in this recipe. Just adjust to your sweetness preference, as you need less stevia since it is about 200% more sweet than table sugar. Start with a little bit, you can always add more later.
